Duong Lam’s roasted pork

The ancient village of Duong Lam still has don ganh roasted pork, the traditional dish known for its association with national hero Ngo Quyen who defeated the Nan Han army, reclaiming national independence.

Don ganh roasted pork, or pork roasted on bamboo sticks, is one among many traditional dishes that has been kept alive in Duong Lam village in Son Tay, Hanoi. These include sugarcane chicken, rice cakes and keo doi (peanut candy). Legend has it that when Ngo Quyen (939 – 944) defeated the Nan Han on the Bach Dang river, don ganh roasted pork was the dish he made to celebrate with his army. Today, this recipe is still considered a special treat that the people of Duong Lam use to welcome friends and tourists.

After 3-5 hours of grilling over charcoal it is ready for serving.

The household of Luong and Huong is the go-to address in Duong Lam to taste and learn about this signature dish. According to Huong, delicious don ganh roasted pork must be made from fresh pork. The meat, marinated in fish sauce, pepper, dried onions and crushed guava leaves, is wrapped around a big bamboo stick with banana leaves lined inside. After 10 minutes of grilling over charcoal, the meat should be prickled so that the fat inside can melt, then washed with salty lemon juice to make the pork rind clean and crispy when roasted. After 3-5 hours of grilling over charcoal it is ready for serving.
