A culinary legacy spanning three generations, this unassuming eatery has become a beloved fixture, renowned for its faithful adherence to a time-honored recipe.

Nestled within the confines of Alley 194 on Vo Van Tan Street in District 3, the restaurant greets patrons with an alluring aroma, beckoning them towards an unforgettable dining experience.

The narrow confines of the restaurant belie the breadth of flavors within. The cooking area, darkened by generations’ worth of smoke, is a testament to the unique Vietnamese-Indian fusion cuisine of the Sau Ngoc Lam Son family.

The story of this culinary journey began with Son’s Indian grandfather and Vietnamese grandmother, who first introduced their signature dish to the public in 1993.

Following his mother’s passing, Son has assumed the mantle of stewardship, committed to preserving the harmonious blend of cultures and traditions that defines their cuisine.

Each day, at the break of dawn, the family commences their meticulous preparations. Son and his father embark on a careful procurement journey, sourcing ingredients that include special items imported from India.

Son’s discerning eye for meat is a testament to his culinary expertise and consideration for his patrons, especially the elderly diners who frequent the restaurant.

“We have a significant number of elderly customers due to our long-standing presence in the area,” Son shared. “I take care to select meat that is neither too tough nor too soft, ensuring it’s just right for their enjoyment.”

The essence of their cuisine lies in the meticulously crafted broth, which simmers patiently for five to six hours. This slow cooking process allows the meat to absorb a myriad of spices, resulting in tender, flavorful perfection.

When a bowl of their signature beef stew is presented, diners are treated to a visual and olfactory feast. The array of vegetables, carrots, meat, tendons, and fat glisten invitingly, tantalizing the taste buds.

Patrons can savor their bowls with a choice of bread, instant noodles, or flat rice noodles, each providing a unique textural experience.

While Son has made subtle adjustments to cater to local palates, he remains steadfast in preserving the core cooking methods passed down from his grandmother and mother, ensuring the original flavor profile remains intact.

“Authentic Indian beef stew can be quite intense in flavor,” Son explained. “So, I’ve made subtle adjustments to suit local tastes while retaining the essence of my family’s traditional cooking methods.”
