The Tasty Secrets of Hanoi’s Pho: A National Intangible Heritage



Hanoi’s beloved pho has earned its rightful place as an iconic symbol of the city’s culinary heritage. This humble dish, consisting of aromatic broth and delicate rice noodles, has been officially recognized as Vietnam’s National Intangible Cultural Heritage since August 9, 2024.

With its roots tracing back to the early 1900s as a street snack, pho has now become synonymous with Hanoi’s cultural identity. The traditional dish is typically prepared with either beef or chicken, creating a perfect harmony of flavors and textures. Accompanied by fresh herbs, spices, and crispy fried dough sticks, it offers a culinary experience like no other.

But pho is more than just a delicious meal. It serves as a cultural bridge, bringing people from all walks of life together. This recognition is a testament to the generations of pho artisans who have dedicated their lives to perfecting and preserving this culinary art, with family-run pho shops becoming cherished landmarks in the city.

Iconic pho eateries in Hanoi include Pho Ong Dao, which began as a mobile cart in the Old Quarter, and Pho Thin Bo Ho, established by Bui Chi Thin in the 1950s. As of 2023, Hanoi was home to nearly 700 pho shops, with a high concentration in districts such as Hoan Kiem, Ba Dinh, and Hai Ba Trung.

The Hanoi Department of Culture and Sports, in collaboration with local communities and authorities, has played a crucial role in documenting pho’s history, preparation techniques, and cultural significance. Their efforts led to the successful inclusion of pho on the National Intangible Cultural Heritage List, ensuring its preservation for future generations.

This recognition is expected to have a profound impact, encouraging initiatives to safeguard the traditional craft of pho-making while promoting it on a global scale. To celebrate this achievement, Hanoi will host the Hanoi Cuisine Festival 2024 from November 29 to December 1, showcasing the city’s culinary excellence and connecting it to the world.

The festival will feature a ceremony honoring pho’s new status, attended by prominent figures and experts. Artist Xuan Bac will also be present to enhance the event’s appeal. A panel discussion, photography exhibition, and traditional cultural performances will provide visitors with a deeper understanding of Hanoi’s rich culinary heritage, solidifying the city’s reputation as a premier culinary destination.
