La Vong grilled fish is one of the iconic dishes of Hanoi that is included in the list of delicious dishes by many of the world’s leading culinary sites. A TV program in the US once said: “You should try this once before leaving the world“.

Ingredients list
Relating to the fish
1 kg of cleaned, fillet fish meat, cut into 4-5cm pieces. Crystal eyed catfish are highly recommended for its firm and naturally sweet fish. Snapper, sea bass, catfish, and tilapia are also good choices.
2 tbsp of turmeric powder
4 tbsp minced galangal
2 tbsp of Vietnam northern “mẻ” or plain yogurt
1 tbsp of fermented shrimp paste (or fish sauce)
1-2 tbsp of vegetable oil
1 teaspoon of ground pepper
2 tbsp of chopped dill
Fresh ginger
Relating to dipping sauce
2-3 tbsp of shrimp paste
3 tbsp of sugar
1 tbsp of hot cooking oil
1 tbsp of minced garlic
1-2 teaspoons of white wine
Sliced chili (to taste)
2 tbsp of lemon juice (or kumquat).
Other components
Scallions, cut into pieces
Dill, cut in pieces
Onion, shredded
Roasted peanuts
Rice noodle
Fresh vegetables: Lettuce, oregano, perilla …

How to make perfect La Vong grilled fish?
Marinate the fish: Put all ingredients (turmeric powder, chopped galangal, batch, ground pepper, chopped cumin, fresh ginger) in a blender and well-blended. Mix the sliced fish well with the marinate mixture, add fish sauce, and shrimp paste. The fish should be marinated for at least 1 hour.
Grill the fish: The fish tastes best when grilled on a charcoal stove. If you do not own any charcoal stove, then bake them in the oven at 250 degrees for 15 minutes until golden brown. Be sure to apply oil to a nice shade of fish that won’t dry out.
Fry the fish: Prepare a hot pan with vegetable oil, then fry the fish until the outside turns golden brown. Add scallions, onions, and dill to the pan.
Mix the dipping sauce: Add shrimp paste, sugar, hot oil, garlic, chili, and white wine to a bowl and mix them well. Then add lemon juice and quickly stir.
