Upon reviewing the menu, it is evident that the proprietor of Vejo’s possesses a profound appreciation for aesthetic appeal. Each culinary creation is meticulously crafted with high-quality ingredients, thoughtfully selected and artistically plated.

Many individuals opt for a vegetarian diet for religious or lifestyle purposes. Thai Thanh Thuy, the owner of Vejo, believes that vegetarian meals reflect a sense of compassion towards the planet. Consequently, she meticulously focuses on each aspect of her cuisine to ensure a remarkable dining experience.

I visit a vegetarian restaurant in search of a new and refreshing dining experience, breaking away from my usual meat-based meals. As someone who appreciates both fine cuisine and beauty, I am immediately captivated by the presentation of Vejo’s inaugural dish: blue sticky rice. The vibrant blue hue of this dish instantly captures attention and ignites curiosity.

Delicious Nut-Filled Rice

This dish surpasses expectations with its soft, sticky rice, perfectly combined with crushed nuts. Gone is the assumption that it’s solely a vegetarian option. To put it simply, it’s nothing short of fantastic.

Fusion cuisine is a standout feature at Vejo, a well-regarded restaurant nestled in Hanoi’s bustling central district. This culinary destination has garnered an impressive following of international patrons, drawn to its diverse offering of delectable dishes. Guests can indulge in a range of tantalizing options, including Japanese favorites like teriyaki rice and miso ramen, Thai delights like larb, renowned spaghetti from Italian cuisine, and mouthwatering Malaysian curries and laksa.

Hargow, crafted with the extract of dragon fruit, is a delectable dish packed with a combination of nuts and beans. It is elegantly accompanied by a side of delectable soy sauce.

Thuy expressed her dietary preferences, stating that while she consumes meat, she also has a preference for vegetarian cuisine. She clarified that her inclination towards vegetarian food is not motivated by religious beliefs, but rather her personal taste. Thuy emphasized her desire for high-quality vegetarian dishes, as opposed to simply substituting vegetables for meat.

During their research on the body’s nutrition, Thuy and her team discovered that every plant contains incomplete proteins. To effectively nourish the body, it is necessary to combine ingredients in a harmonious manner, thereby creating complete proteins.
